There are some firms out there that will lie about the responsibilities in order to exploit interns for unpaid labor. I don't know why they just don't hire freshman or one of the psycho high school kids that wants to start interning at 16, but whatever. I ran into one of these during my SA search but luckily I saw the red flags and got the hell out of there.

Check out LinkedIn. Bullet points from past interns are really helpful, even shoot those guys a message and ask what they thought about it. Look and see if they have any sort of recent transactions listed, search their name on Google to make sure they aren't about to get shut down by the SEC, look at comments about the firm in articles that are featuring them, post on here to see if people know about them, etc. Generally you can find out a lot about what they have the interns do if you just do your research.
